Strawberry Breakfast Bites


To help keep the mix from sticking to my hands, I refrigerate it for about 30 minutes before making into balls. This really helps! These are also very good with toasted coconut mixed in.

Ingredients


  • 1 Cup frozen strawberries
  • 1 Cup oats
  • 1/2 Cup sunflower seeds
  • 1/2 Cup coconut flour
  • 2 Tbsp Coconut oil
  • Desiccated coconut

Instructions

  3. Place first 4  ingredients  in a food processor with 1 TBSP of the coconut oil
  4. Whiz, whizz, whizz, it will take some time, be patient
  5. Eventually it becomes a fine paste and form a ball
  6. If the mixture looks dry add the second spoon of coconut oil. It depends a little on how much oil is released from the sunflower seeds.
  7. Use a teaspoon to scoop balls
  8. Roll the balls in desiccated coconut
