Strawberry Breakfast Bites
To help keep the mix from sticking to my hands, I refrigerate it for about 30 minutes before making into balls. This really helps! These are also very good with toasted coconut mixed in.
Ingredients
- 1 Cup frozen strawberries
- 1 Cup oats
- 1/2 Cup sunflower seeds
- 1/2 Cup coconut flour
- 2 Tbsp Coconut oil
- Desiccated coconut

- Place first 4 ingredients in a food processor with 1 TBSP of the coconut oil
- Whiz, whizz, whizz, it will take some time, be patient
- Eventually it becomes a fine paste and form a ball
- If the mixture looks dry add the second spoon of coconut oil. It depends a little on how much oil is released from the sunflower seeds.
- Use a teaspoon to scoop balls
- Roll the balls in desiccated coconut
