HEALTHY YOGURT CAKE (ONE-BOWL)
Very good recipe. The cake was moist and the texture was light. I subbed butter-flavored crisco for the margarine, used 3/4 c. sugar, as other reviewers suggested, and used vanilla flavoring and vanilla yogurt. I love that this recipe is so flexible and I will definitely make this again.
Ingredients
- 2 eggs
- 7/8 cup (200gr) plain yogurt
- 2 cups (250gr) whole wheat flour or plain flour
- 2 Tsp baking powder (I use self-raising whole wheat flour)*
- 1/2 cup (100gr) cane sugar
- 1/3 cup (80gr) canola oil
- 1/4 Tsp Vanilla essence
- 1 Lemon, zest
- 1 pinch salt
Instructions
- Preheat the oven to 350 F degrees and place the rack on the middle position.
- Grease an 8.5x4.5x2.5 inch loaf pan with butter, cooking spray or simply line the pan with parchment paper (in this case there's no need to grease the pan).
- Mix eggs and sugar, then add oil, lemon zest, vanilla essence and mix again. Add yogurt (not very cold) and mix into a smooth consistency. All in one bowl.
- Whisk flour, baking powder and a pinch of salt together (if you're not using self-raising flour) and add to the wet batter until just combined.
- Scrape the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes until a skewer inserted into the centre of the cake comes out clean.
- When the cake is done, remove it from the oven and place on a wire rack to cool.
- You can serve it plain, dusted with icing sugar or brushed with some quick and easy jam glaze which adds a lovely shine.
- I glazed this cake brushing some warm orange fruit spread on top*.
